These muffins are so 'FLY' and delicious, you won't regret giving them a try. The crumb topping is rich in taste with the combination of the brown sugar, butter, cinnamon and flour. Serve them as is, or with a hot cup of coffee or tea and you'll be in for a treat.

Ingredients.
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/2 cup butter
2 eggs
1 1/4 teaspoon vanilla
1 1/2 cups chopped apples (I used Ambrosia apples but any sweet apples will do).
Topping
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
Directions
Step 1
Preheat the oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin pan.
Step 2
Mix flour, baking powder, baking soda, and salt in a medium bowl.
Step 3
Beat together sugar, butter, and eggs in a large bowl until smooth. Mix in vanilla. Stir in apples, then gradually blend in flour mixture. Spoon batter into the prepared muffin pan.
Step4
Make topping: Mix brown sugar, flour, and cinnamon in a small bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle over each muffin top.
Step 5
Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes. Let sit 5 minutes before transferring muffins to a wire rack to cool.
